Cassoulet-flavoured beer, what ever next?

Creators of a beer festival in Toulouse called Le Festival Octobière have created a new beer, based on the tastes of cassoulet.

They wanted to create tastes of Occitanie, and what better symbol of Occitanie food, than the celebrated cassoulet?

They used white haricot beans for the starch, and they created a jus made from the reduction of duck and pork with a bouquet garni. They let the jus reduce very slowly for a week, and removed all traces of fat.

They have three different versions of the cassoulet beer, and you can taste them at their beer festival until Sunday October 14.
