There are at least two reasons to visit the Corbieres village of Cucugan. Not only is it home to one of the best bakers in the Languedoc, if not in the whole of France, but at Château Trillol, you will find some rather good Corbières. And the dramatic Cathar castle of Peyrepertuse is just down the road.

The entry level Corbières from Château Trillol is a blend of Grenache, Syrah and Carignan. Two thirds of the wine is aged in both new and older wood for ten months and gradually blended with some wine kept in vat, to obtain the desired balance. The colour is deep, as befits a good Corbières, and the nose is redolent of fresh spicy fruit. The palate is rounded, with black fruit and elegant tannins, with a fresh finish. It is just the thing for a cold winter’s night, with a hearty daube provençale.
