Truffle harvest looks good in the Aude
Despite the very rainy autumn, the harvest of truffles looks good in the Aude, according to Elena Anton, who together with her golden retriever, collects the precious mushrooms.
The truffles have appeared later than normal, but they are still in good time for the Christmas gourmands.
The first truffles were a little damaged by the Autumn rains, but the cold snap and the drier weather have reassured producers. “Over the last two weeks it has improved, if it does not rain anymore, everything will be fine,” Elena said.
"I think this year the quantity will be better than last year for the region," said Gilles Fiorotto, manager of a delicatessen. Prices vary between 900 and 1800 euros per kilo. The closer we get to the holidays, the higher the prices.
It's the beginning of the truffle market season that lasts until the end of February.
